  • 2 cups Johari Pishori rice
  • 1 cup coconut milk
  • 2 tablespoons ghee
  • 4 cloves garlic, minced
  • 1 onion, diced
  • Fresh cilantro for garnish

Instructions

  1. Heat ghee in a pot and sauté garlic and onions until fragrant.
  2. Add rice and stir for 2 minutes to lightly toast.
  3. Pour in coconut milk and 3 cups water, bring to a boil.
  4. Cover and reduce heat, simmer for 15 minutes until water is absorbed.
  5. Let rest for 5 minutes, then fluff with a fork.
  6. Garnish with fresh cilantro and serve hot.

  • 3 cups cooked Johari Pishori (day-old)
  • 3 eggs, beaten

  • 2 tablespoons vegetable oil
  • 2 green onions, chopped

Instructions

  1. Heat oil in a large wok or skillet over high heat.
  2. Add beaten eggs and scramble until cooked, then set aside.
  3. Add rice and stir-fry for 3 minutes, breaking up clumps.
  4. Add vegetables and stir-fry for 2 minutes.
  5. Pour in soy sauce and toss well to combine.
  6. Add eggs back and toss. Garnish with green onions and serve.

Instructions

  1. Heat ghee and brown beef on all sides, then remove.
  2. Sauté onions and garlic until golden.
  3. Add spices and toast for 1 minute.
  4. Add rice and stir for 2 minutes.
  5. Return beef, add broth, cover and simmer for 25 minutes.
  6. Let rest 5 minutes, then fluff and serve with lime wedges.
